chief writes ' GREENBRIAR DUCK KABOBS
Chef Jerra Myers-Greenbriar Hunting Club
Makes 10 servings
1 cup Canola Oil
1 white onion roughly chopped
2/3 cup sugar
1/3 cup Tamari soy sauce
1 tablespoon flour
2 cloves Garlic
2 tablespoons sesame seeds toasted
10 duck breasts cut in 1� cubes
12 wooden skewers soaked in water
1 8 ounce can pineapple chunks drained
Toast sesame seeds in a dry pan and put aside, remove seeds from pan after toasting. In a food processor, combine first 6 ingredients and blend until smooth. Pour marinade into a glass casserole dish or large plastic zip type bag. Stir in sesame seeds. Reserve ½ cup marinade, cover with plastic wrap and chill. Add duck to remaining marinade. Stir to coat. Cover with plastic wrap and refrigerate for 6 hours or overnight. Soak skewers in water for 30 minutes. Drain. On each skewer, alternate several duck pieces with 1 or 2 pineapple chunks. Grill kabobs until medium rare, do not overcook.! Grill for 15-20 minutes, turning kabobs constantly while brushing several times with reserved marinade being careful of flare-ups. Some charring on the kabobs is ok. Serve on a lettuce lined platter, taking kabobs off the skewers. Serve with toothpicks.
Be careful serving this dish. Your guests will accuse you of serving beef tenderloin kabobs. They can’t believe it’s duck.

chief writes 'How about this one for the strange and interesting file: Childhood friend and old school buddy of mine, Bill Schember, is now a C130 man for the Air Force. Bill has been all over the place with Hercules air lift operations and has seen his share of the unusual. Recently, however, Bill was on final approach descending to an air base in California when something impacted the plane. At first they didn't know what it was, but soon they discovered that the damage was being caused by ducks which were punching through the fuselage of the airplane.

chief writes 'On January 13th, 2002 Bull and I were hunting in a flooded dead timber area near Bayou Barhtolomew. We had knocked down a few Mallards, but were somewhat dissapointed as we were hosting an old family friend: Tom Heflin of Rockford, IL. Tom doesn't get to hunt all that much and we wanted to get him into some ducks before he left the next day. At about 8:30, Bull eased out to waist deep water to adjust the wing and rearrange the decoys. (This is a favorite trick of all duck hunters: during duckless intervals, proceed to the middle of your decoys and almost without exception, at least one duck will appear out of nowhere purportedly ready to land in the middle of your spread. Of course, no one is ever ready for the interloping waterfowl's unexpected arrival, and the person amidst the blocks prevents a safe shot.)
